The 9th episode of Portugal, the New Dawn, whereby il Fumo hosts a collaboration dinner showcasing new Portuguese cuisine, is pleased to welcome Chef Tiago Bonito of 1 Michelin-starred Largo do Paço Restaurant at Casa da Calçada – a Relais & Châteaux hotel in Amarante, Portugal. For 2 nights only, from 29-30 October, he will be joining hands with our chef-partner Nelson Amorim to create a refined Portuguese culinary experience for our discerning guests.
Chef Tiago Bonito is considered as one of the most outstanding chefs to emerge from the new Portuguese cuisine movement. Before leading the kitchen at his current restaurant, he had trained at many top Michelin-starred restaurants including 2 Michelin-starred Vila Joya in Algarve, 3 Michelin-starred Alinea in Chicago, and 3 Michelin-starred D.O.M. in São Paulo. The journey later took him to Vilalara Thalassa, a 5-stars resort in Southern Portugal. His outstanding works there contributed to him winning "Chef of the Year 2011" and “Innovation award” at the prestigious “CCA Awards”. He finally joins Largo do Paço as an Executive Chef in 2017. The restaurant has been awarded 1 Michelin Star since 2004, and he manages to retain this prestigious distinction through a balance between his personal brand of Portuguese cuisine and the unforgettable experience of an haute cuisine.
His cuisine speaks much about Portugal. A journey through the north, center, and south of the country of which his love for great seasonal produces merges with a creative reinvention of traditional dishes tells a story of childhood memories and the places he has been in the process:
"My food is sea and fire. It is a smokestack, eucalyptus, pine and vine. Flavors that I know and transport to the dishes creating experiences that appeal to all the senses ", Chef Tiago explains.
Together in 7 courses, the 2 chefs will present Portuguese cuisine – but like you’ve never tasted before. The dinners will also be accompanied by wine pairing curated by our Group Sommelier Thanakorn Mankit.
