The 8th episode of Portugal, the New Dawn, whereby il Fumo hosts a collaboration dinner showcasing new Portuguese cuisine, is pleased to welcome Chef Ricardo Costa of the 2 -Michelin Star the Yeatman (the only restaurant in Porto to receive 2 stars) for the first time in Bangkok. For 2 nights only, from 16-17 May, he will be joining hands with Chef Alexandre Ferreira from Escola de Hotelaria e Turismo do Douro-Lamego and our chef-partner Nelson Amorim to create a unique Portuguese gastronomic experience for our discerning guests.
Chef Ricardo Costa has long been one of the forerunners of new Portuguese cuisine. He gained his extensive experience at the top restaurants in Portugal, Spain and the UK. He was Head Chef at the Restaurant Portal, in London, in 2007, and Executive Chef of the Restaurant Largo do Paço, at the Casa da Calçada Hotel in Amarante, where he earned his first Michelin Star in 2009 and 2010. Afterwards, he joined the Yeatsman and won its 1st Michelin star within a year of opening and the 2nd star soon followed in 2017.
His personal recognitions include Chef of the Year 2009 by the Portuguese magazine Wine; "Chef of the Future” 2012 by the International Academy of Gastronomy and Best Chef in Portugal 2013 in the Gastro Arco Atlantico prizes in Spain. He was also a member of the jury on the programme Top Chef Portugal in 2012.
Chef Alexandre Ferreira is an Executive Chef of Escola de Hotelaria e Turismo do Douro-Lamego in Porto. He is one of the professors that our chef Nelson trained with when he attended the culinary school. For more than 20 years in the industry, Alexandre is well-respected among the Portuguese culinary scene and has been selected to be a member of the international judges for Euroskills and Worldskills competitions.
The 3 chefs will present their personal brands of new Portuguese cuisine through 7 courses. The dinners will also be accompanied by wine pairing selection by our Group Sommelier Thanakorn Mankit.
