‘It takes 4 to Burgundy’

il Fumo, in partnership with Global Food Supply, proudly hosts the most prestigious Burgundy wine dinner this 19 -20 March 2019. To pair with this selection is 5 specially-created dishes by 4 leading chefs including ‘Top’ Pongcharn Russell, Michelle Goh, Jesus Pascual and our chef Nelson Amorim.

Whether or not you are wine connoisseur, the name Burgundy needs no introduction as the world’s finest wine region. We have handpicked some of the most exceptional labels that best express Burgundy’s terroir from producer Maison L. Tramier & Fils including those of Puligny-Montrachet AOC, Gevrey-Chambertin, Côte de Nuits 2016 and Beaune Premier Cru, Côte de Beaune 2015, to name a few.

To accompany these wines, our chef Nelson Amorim has invited his friends for a 5-course, 8-hands collaboration dinner including:

‘Top’ Pongcharn Russell: Named Best Young Chef 2018 by BK magazine, Top was trained in London and worked with the very best names in business such as 1-Michelin star Gauthier Soho, 2-Michelin star Sketch and 1-Michelin star Pearl. He then moved on to work as sous chef at Michelin-starred chef Jason Atherton’s Pollen restaurant in Singapore. His most recent work was at the fan’s favourite modern Australian bistro Freebird

Michelle Goh: This Malaysian-born pastry chef was recently wowing the crowd at 2-Michelin star Suhring. She was trained under Anna Polyviou, the pastry superstar at the Shangri-La Sydney; then the legendary 3-hatted Rockpool, now known as Eleven Bridge by Neil Perry, one of Australia’s leading and most influential chefs; and Pollen in Singapore.

Chef Jesus Pascual: This Spanish chef may not be a familiar name in Bangkok yet, but he surely will soon. Formerly, Jesus was at 3-Michelin star Arzak in San Sebastián, 2-Michelin star Les Cols in Girona and 1-Michelin star Fogony in Barcelona. He was recently Executive Chef of Advance Caterers Group in Hong Kong before recently establishing his own culinary consulting “Quercus Culinary”.
