The second in “Friends of 80/20” series, in partnership with FineDiningLovers by S.Pellegrino, whereby we invited our dear chef friends from the kitchen all over the world for an exclusive collaboration – sharing food culture, local ingredients & their collective know-hows – sees Chef Jimmy TY Lim of JL Studio, Taiwan – making his debut in Bangkok at 80/20.
JL Studio is the first restaurant to be serving Modern Singaporean cuisine overseas, inspired by Chef Jimmy’s childhood memory. Prior, he has honed his skills at Le Mout in Taichung under award-winning chef Lanshu Chen, Copenhagen’s Noma, and New York’s Per Se, among other. Chef Jimmy delivers flawless French techniques with exciting flavors of his Singaporean roots and Taiwanese ingredients, which garnered him many accolades since JL Studio opened in 2017. Recently, the Restaurant has been awarded “Miele One to Watch” for Asia's 50 Best Restaurants 2019, so do expect a bright future from this young upstart.
Together with chef-patron ‘Joe’ Napol Jantraget and pastry chef Saki Hoshino, Chef Jimmy is challenged to adapt his style of modern Singaporean cuisine to the vibrancy of local Thai ingredients. Two nights only and definitely promises to be a “one to watch” collaboration!
