The third in “Friends of 80/20” series, in partnership with FineDiningLovers by S.Pellegrino, whereby we invited our dear chef friends from the kitchen all over the world for an exclusive collaboration – sharing food culture and the love of local ingredients – is pleased to welcome Chef Hieda Ryohei of 祥雲龍吟Ryugin, Taiwan.
Chef Ryohei Hieda has been praised as one of the leading chefs in Taiwan and Asia. He gained his extensive experience in Japan and USA by joining many 3-Michelin starred restaurants including Nihonryori RyuGin, Benu and Manresa before the journey took him to Taiwan as Chef de Cuisine of Shoun RyuGin since 2014. The Restaurant is considered the pioneer in the local-sourced movement of which Chef Hieda has traveled extensively throughout Taiwan to source and develop unique and top ingredients - raising the standard for Taiwan's fine dining industry to what it is today.
Shoun RyuGin is a sister restaurant of the legendary 3-Michelin star RyuGin Tokyo. Among its many accolades, this Taipei outpost has received 2 stars from Michelin Guide Taipei 2018 and 2019, no. 31 on the list of Asia's 50 Best Restaurants 2019 & no. 1 restaurant in Taiwan on La Liste 2019.
For 2 nights only, Chef Ryohei will be joining hands with chef-patron Napol Jantraget and pastry chef Saki Hoshino to showcase the best of both worlds by using local Thai ingredients. A unity of Japanese, Thai & Taiwanese flavours that will sure to delight even the most discerning palates.
