80/20 Introduces New Summer Menu

80/20, recently awarded a MICHELIN Star in the MICHELIN Guide Bangkok, Chiang Mai, Phuket & Phang-Nga, proudly unveils a new summer menu, starting from February 25th onwards. The new menu will see chef-patron ‘Joe’ Napol Jantraget & pastry chef Saki Hoshino translate their memory of summer into 10-course tasting menu – combining knowledge & techniques that they have picked up along their culinary journey.

The two chefs are focusing on serving dishes that are lighter than other seasonal menus to perfectly fit the hot weather. Many of the dishes will be served cold or at room temperature in order to cool your body down & freshen up your palate at the same time. Some of the dishes include “Pla Heng Tang Mo”, “Flavour of Summer Gourd, Salted Duck Egg” & “Geang Nok Mo 2020”.

Thanks to summer that produces many amazing local fruits such as marian plums and durian, seasonal fruits will also be the main highlight of the menu. It’s an opportunity to showcase various types of local fruits and bring out their unique tastes to enhance flavours of each dish. For instant, Chef Joe specifically chooses ripe Maha Chanok mango to make mango sheet for “Gift of Southern Sea”, raw Khiew Sawoey mango (Green Mango) to serve with “Smoked Pork Rib”, and ripe Nam Dok Mai mango (Barracuda Mango) for “Mango”- the final dessert course.

“Our new summer menu is still sharing the same soul of the menu last year. However, we do take in account more on the whole tasting experience and make it even more well-rounded in terms of consequences & flavours”, says Chef Joe, “I’ve also picked some of my favourite dishes from the previous summer menu such as Grilled Wagyu Beef, Honey & Khao Chae and put them again in the menu this year because, for us, they are the reasons why summer is worth waiting for”. To enhance the experience, our Group Sommelier Thanakorn Mankit has hand-picked xxx wines that best accompanied with each course such as 2017 Hugel Gentil, Alsace France, 2015 Chronicle, Vinho Tinto, Douro DOC, Portugal & 2018 Planella, Joan d'Anguera, Montsant, Spain.
