Our new head chef Andrew Martin is ready to launch his first new tasting menu for 80/20 fans and local foodies alike.
A proud holder of 1 MICHELIN star for 2 consecutive years and no. 55 in ASIA’S 50 BEST RESTAURANTS 2021, 80/20 takes great pride in serving guests with our brand of innovative Thai cuisine. The all-new menu sees us continuing the same path, albeit with strong focus and passion for local ingredients and Chef Andrew’s own unique signature.
Chef Andrew is no stranger to Bangkok’s culinary scene. Nor is he a stranger to 80/20 either. Having worked as 80/20’s chef de cuisine between 2016-2018, he was later head chef at Issaya Siamese Club and Jaew Jim Thompson respectively where he was able to strengthen his foundation of traditional Thai recipes while showcasing his own creativity through his personal interpretation of Thai cuisine. He is now back at 80/20 and ready to bring his adventurous take on local ingredients, which propels him to be one of the most exciting chefs in Thai gastronomy working today.
The new menu, inspired by Andrew’s various adventures across Thailand, offers distinctive flavours that is sure to delight and surprise one’s palate – and perhaps, bring back past memory. Thoughtfully designed to captivate all senses, the tasting menu is presented in various delectable morsels before culminating with family-style sharing dishes. Some of the highlights includes Stormy Sea (Squid, Mangosteen, Chili) – drawn from Andrew’s squid fishing trip in the South; Gai Krajan (Chicken, Sweet Chili, Cashew) – a feast Andrew enjoyed while he visited Kaeng Krachan National Park; and Issan Market (Mushrooms, Herbs, Pickles) – a reminder of Andrew’s excitement when visiting the local market and seeing an array of seasonal mushrooms the region offers.
For desserts, chef Andrew presents refreshing dishes like Suan Maprow (Coconut, Guava, Honey) and end with Petit Fours - Black, White, Gold. A perfect way to cap off your splendid dinner.
